Best and easy Christmas pudding recipe

Combine 1 cup of breadcrumbs, 1 cup of mixed dried fruit, 1 cup of brown sugar, 1 cup of butter, and 1 cup of flour in a large mixing bowl.

Beat 3 eggs and add them to the mixture, along with 1 cup of milk and 1 tsp of vanilla extract

Stir the ingredients until they are well combined and the mixture is smooth.

Pour the mixture into a greased pudding basin and cover the top with parchment paper.

Tie a piece of string around the rim of the basin to hold the parchment paper in place.

 Place the basin in a large pot of boiling water and simmer for 4-5 hours, making sure to keep the water level at least halfway up the side of the basin.

1. Remove the pudding from the pot and allow it to cool for a few minutes before turning it out onto a plate.

To serve, slice the pudding and serve it with a dollop of brandy butter or whipped cream

1. If you like, you can also decorate the pudding with holly leaves and berries.
